Liam Dempsey is co-founder and CEO of Dirk’s, a new Brisbane-born fast-casual brand built around bold flavour, genuine hospitality and a purpose: helping more dogs find loving homes. Following its first store opening at Buranda in August 2026, Dirk’s is preparing to open its second venue at South Bank in October, with ambitions for national expansion.

Before Dirk’s, Liam spent 11 years helping build BOUNCE into a national and international brand, including as General Manager of Australia and Global Chief Operating Officer. His experience spans venue performance, brand growth and building teams that deliver great customer experiences.

Having started his working life in a pizza shop, Liam has long had a love of food and hospitality. At Dirk’s, he’s bringing that passion and experience to building a new brand, focusing on great people, simple operations and strong foundations for growth.
