
Wayne Wallis is a highly experienced hospitality and aged care manager with over 35 years of experience in food services, hotel operations, and strategic leadership. Beginning his career in the Australian Army Catering Corps, Wayne has built a diverse career spanning senior roles in hospitals, aged care, and large-scale hospitality services.
Currently, Wayne, the National Food and Beverage Manager at Arcare Aged Care, oversees the strategic direction of food and beverage for the national portfolio of 57 residences. He has been instrumental in delivering organisational change, including the internalisation of catering services, the rollout of a national digital HACCP compliance system, and the introduction of innovative room service ordering and menu display platforms. He and his team have delivered major commercial savings, advanced nutrition-focused menu planning, and improved resident dining experiences through internal strategic initiatives.
Wayne works closely with Arcare’s parent company, the Knowles Group, collaborating with architects and designers to optimise kitchen and dining room layout, ensuring resident dining experiences are enhanced and catering equipment selections are both robust and user-friendly. Drawing on experience from new builds and refurbishments, Wayne demonstrates how smart kitchen design, workflow optimisation, equipment investment, and technology solutions can transform aged care foodservice operations.
