
William’s passion for bread began in the French countryside near Lyon, where he trained for several years as an apprentice in pastry and bread making. Eager to broaden his horizons, he ventured overseas to Canada, what was meant to be a one-year cultural experience became a six-year adventure. In 2018, his journey then brought him to Gold coast Australia where he joined Burleigh Baker as a baker. Through dedication and skill, he rose to the role of Production Manager now leading a large team of bakers specialising in sourdough.
Beyond his expertise in sourdough, his greatest specialty, William brings a deep knowledge of fermented products including homemade cheese, sauerkraut, and salami, combining traditional craftsmanship with a passion for innovation and quality.
